Fun trivia: Believe it or not, it takes about 40 gallons of watery maple sap to create one  gallon of deliciously thick maple syrup. The process of slowly simmering the sap requires infinite patience and skill. Too much heat and the syrup burns. There is as much art as well as science in the syrup maker’s craft!
